Scrambled Eggs, Cinnamon Oatmeal & Veggies

Serves 1

INGREDIENTS 1/2 red bell pepper
1/4 sweet onion
2-3 mushrooms
1 pinch wheat grass
2 tbsp canola oil
2 eggs
1/4 cup oatmeal
1/2 cup water
1/2 tsp cinnamon
salt & pepper for taste

If you are a big breakfast person, then you don’t want to miss out on this. Good morning! Let’s start cooking.

  1. Prepare the veggies. Chop up red bell pepper, onions, mushrooms, wheat grass and set to the side.
  2. Add 2 tbsp of canola oil to the pan. Heat the veggies (onions, bell pepper, mushrooms) until they are cooked. Add salt and pepper for taste, then sprinkle raw wheat grass on top of the warm veggies onto a dish.
  3. Next add 2 eggs to a bowl and stir until beaten. Add 2 tbsp of olive oil to the pan and then pour the egg mixture into the pan. Stir frequently until the eggs are cooked. Place the scrambled eggs onto your dish.
  4. Then add a 1/4 cup of dry oats to the pan and add 1/2 cup of water. Cook until desired texture. You can add more or less water to your oatmeal depending on how you like them. Remove from the pan onto your dish, then sprinkle cinnamon on top.
